What does grain free mean?

Grain-Free is the elimination of all grains including wheat, rice, corn, barley, amaranth, quinoa, buckwheat and oats.

Why go grain free?

People who follow a grain free diet, have found many health issues alleviated: Crohn’s, IBS, autoimmune diseases, diabetes, arthritis, endometriosis, Interstitial Cystitis, dementia, brain fog, systemic candida, obesity, fatigue, reversal of seizures, depression, reduced anxiety. Going gluten free is great but most gluten free packaged food has a lot of sugar and starches added, which can be just as bad for you as the gluten. Wonder why you aren’t feeling better after going gluten free? Its because your body is reacting to the other grains just the same. It’s called the cross-over effect. Grains are not the same today as they were for our ancestors either. We over eat them and they are filled with GMO’s, pesticides, bacteria and fungus. Another reason why to avoid them. For some people it may not necessarily be the grain that is bothering them, it could be how it was grown and processed to get to your dinner plate.

What is the Paleo Diet?

Also known as the caveman diet, The Paleo Diet is eating like we used to eat back in the day, even before farming. If a caveman couldn’t eat it, neither can you. This means you can eat anything we could hunt or gather – meats, fish, nuts, leafy greens, regional veggies, and seeds. It’s not always easy following a strict Paleo diet. That means pasta, crackers, bread, beans etc. Since that isn’t always totally practical for in modern times many people have came up with amazing recipes using only “Paleo safe” foods to make yummy foods like bread, crackers, cake, chocolate, cookies, pancakes and on and on.

What is cassava flour?

The cassava plant is a staple crop to millions of inhabitants in South America and parts of Asia and Africa. The plant produces the cassava root (also known as yuca or manioc), a starchy, high-carbohydrate tuber – similar to yam, taro, plantains and potato. Cassava is high in calcium, phosphorous, manganese, iron and vitamin C. High fiber and rich in Saponins.

Does is freeze well?

Yes, just be sure to put it in a freezer bag.

Should I refrigerate the bread?

Yes, you can, depending on how fast you go eat it. We keep it on the counter at our home, but more than one of us is eating it everyday. Refrigerating it will make it last longer, but may dry it out a little bit. From my experience, Paleolicious Bread should last for over a week in the fridge.
